Chef John Tesar announces his new coastal seafood restaurant, Outer Reef, will open spring 2020 at Laguna Cliffs Marriott Resort & Spa.
Outer Reef will pay homage to Tesar’s critically-acclaimed restaurant Spoon Bar & Kitchen (Dallas, TX 2012 -2014) which received national recognition and accolades for Tesar’s innovative seafood creations. In 2014, Tesar was a semifinalist in James Beard’s Best Chef: Southwest category.
Guests will enjoy Tesar’s interpretation of coastal seafood, using fresh California produce and seafood sourced exclusively from the West Coast, from Baja to Alaska.
Sample menu items will include Raw dishes such as Pounded Big Eye Tuna – Nduja Crouton, Ligurian Olive Oil, Malden Salt, Chives and Geoduck Sashimi – Various Cucumbers, Botanical Citrus Vinaigrette. It will also include Barely Cooked dishes like Grilled Octopus – and Live Diver Scallop – Shallot Brown Butter, Wild Mushroom Dashi, Shaved Black Truffle. Larger fish dishes will also be featured such as Tandoori Rubbed Hawaiian Swordfish – and Kimchi Glazed Pacific Halibut – Uni Butter, Steamed Savoy Cabbage, Vegetable Pancake, Crispy Pork Belly. The menu will also include salads, hand-prepared pastas, and an assortment of dry-aged meats.
The restaurant will offer an elegant but casual ambiance, with coastal elements incorporated throughout the space. Outer Reef will offer dinner featuring menus presented by Chef Tesar, and a separate menu available for breakfast.
In addition, Outer Reef updates include a reimagined entry way – featuring an impressive 1,000 gallon shark tank, extended bar area, renovated buffet area, and all new private dining room. A brand-new outdoor patio is also underway, featuring 5 fire pits, heated and bistro lit trellis, and brand new furniture. Guests will also enjoy the numerous enhancements throughout the resort including guestrooms, banquet spaces and public spaces throughout the property.
